Chinese Beef and Broccoli Stir Fry
Adam refused broccoli for eight months. Then takeout changed everything. It was the sauce. This is how I make that sauce at home, with silky velveted beef and bright green florets, in 35 minutes.

- Beef and marinade:
- 500g (1 lb) flank steak or sirloin tip, sliced thin against the grain
- 3/4 tsp baking soda
- 1 tbsp light soy sauce
- 1 tbsp Shaoxing rice wine (dry sherry works)
- 2 tsp cornstarch
- 1 tsp neutral oil
- Sauce:
- 3 tbsp oyster sauce
- 2 tbsp light soy sauce
- 1 tbsp dark soy sauce
- 1 tsp sesame oil
- 1 tsp sugar
- 1/2 cup (120ml) beef broth
- 1.5 tbsp cornstarch
- Stir fry:
- 400g broccoli florets (or gai lan from the wet market)
- 3 cloves garlic, minced
- 1 inch fresh ginger, minced
- 2 tbsp neutral cooking oil

Freeze the beef for 30 minutes before slicing. Semi-frozen beef is firm enough to cut into paper-thin slices. Once sliced, cut perpendicular to the visible muscle fibers. Those are the grain lines running in one direction. Cut across them, not with them.

Velvet the beef. Toss sliced beef with baking soda, soy sauce, Shaoxing wine, and cornstarch. Mix well and rest for 15 to 20 minutes. Do not go past 30 minutes or you will taste that metallic edge from the baking soda. After resting, drizzle the teaspoon of oil over the beef and toss. This stops the slices from sticking together in the wok.

Make the sauce. Whisk oyster sauce, light soy sauce, dark soy sauce, sesame oil, sugar, beef broth, and cornstarch together until the cornstarch fully dissolves. The dark soy gives the deep brown color. Light soy gives salt and flavor. Both matter.

Blanch the broccoli. Bring salted water to a boil. Add florets for 90 seconds exactly, then drain and transfer to cold water. This stops the cooking and keeps broccoli vivid green and slightly crisp. Drain and set aside. If using gai lan from the wet market, add the sliced stems first and leaves only in the last minute of stir frying since they cook at different rates.

Get the wok smoking hot. Let the empty wok sit over high heat until it starts to smoke before adding oil. This is the step most home cooks skip. That smoking surface is what gives you wok hay, the faint seared note under the sauce.

Sear the beef in batches. Add 1 tablespoon oil to the hot wok. Add half the beef in a single layer. Do not touch it for 45 seconds. Let it sear, then toss and cook another 30 seconds. Pull it out while still slightly underdone. It finishes in the sauce. Overcooking in the wok is how you get tough beef. Repeat with the second batch.

Build the sauce and finish. Add the remaining oil. Toss garlic and ginger for 30 seconds until fragrant. Pour in the sauce. Stir constantly for 1 minute as it thickens and turns glossy. Return the beef and add the broccoli. Toss everything for 30 seconds to coat. Serve over jasmine rice.
Tips for Success
- ✓Baking soda raises the meat's pH and stops proteins from clenching during high heat. That is why restaurant beef is silky. 3/4 tsp per 500g is the right amount. Use more and you will taste it.
- ✓A cast iron skillet works if you do not have a wok. It holds high heat well. What does not work is a non-stick pan on medium. High heat is not optional.
- ✓Regular broccoli from any supermarket is perfectly good. Gai lan from the wet market is slightly more bitter and complex. With gai lan, add the stems before the leaves because the timing difference is real.
- ✓Slice against the grain or the beef will be chewy regardless of how well you velvet it. The visible grain lines run in one direction. Cut perpendicular to them.
