Easy Broccoli Rice Casserole

  • 1/2 medium yellow onion, finely diced
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
  • Optional: 1/2 cup crushed Ritz crackers + 1 tablespoon melted butter (topping)

    Preheat your oven to 350°F (175°C). Grease a 9x13 inch (23x33 cm) baking dish with butter or cooking spray.

    Spread the thawed broccoli onto a clean kitchen towel and press firmly to remove as much water as possible. This step matters more than you think. Frozen broccoli holds a lot of water and will turn your casserole soupy if you skip it.

    Sauté the onion in the 2 tablespoons of melted butter over medium heat for 3 to 4 minutes until soft. This adds real flavor that you will not get from just dumping everything together.

    In a large bowl, combine the cream of mushroom soup, cream of chicken soup, sour cream, garlic powder, and a good pinch of salt and pepper. Stir until smooth.

    Add the cooked rice, dried broccoli, sautéed onion, and 1 cup of the grated cheddar to the bowl. Fold everything together until the rice and broccoli are fully coated in the creamy mixture.

    Pour the mixture into the prepared baking dish and spread it into an even layer. Scatter the remaining 1/2 cup of cheddar across the top. If you are using the cracker topping, add it now on top of the cheese.
